As the title says, I'll be tackling the rear wheel bearings and seals soon and I need some input as to the process. My FSMs only have limited information for the LSD models and I have a standard open diff. What kind of preload will I need on the bearings? The only reason why I'm doing this is because the wheel seals are leaking.

It looks as if the special tool preloads them. Similar to special tool used for installing cam and crank seals where you just drive the tool down until it stops. With the cam seals I just do it by look and feel but with bearings that could prove to be tricky and disastrous if done incorrectly. And/or they are preloaded when you press the retainer back on.
Sounds like you just cut the old retainer off given its press fitted to 11k pounds plus. To make things easier I would cut the old bearings off as well. Putting it all back together would be the fun part. Look
Edit: So where’s it leaking from. As I expected there is an oil seal at the diff end that keeps oil in the diff. I didn’t see one in the service manual but saw it on the exploded view on autozone for the 00 and up. No reason to believe yours would be any different. Inner seals are easy, only problem is it probably contaminated and diluted the bearing grease at the wheels.

Looks like outer and inner wheel bearing seal failure.
