I carry the following:
Milk Crate- gray tarp, 12 ton bottle jack and handle, small shovel/saw combo, 2 2" x 30' tow straps, 1 3" X 6' tree protector strap, 2 receiver shackles, large mag lite flashlight, tie downs, toilet paper, trash bags, leather gloves, duck tape, d-rings, air hose/chuck for the CO2 tank, fire extinguisher.
Tool bag #1- enough spare tools to do many common trail repairs, impact wrench and sockets (run by the power tank).
Tool bag #2- spare fluids sealed in zip lock bags including brake fluid, oil, power steering fluid, bars leak. Wheel bearing/axle grease, blue rtv sealer, hose clamps, funnel, spare fuel line and many shop rags.
Power Tank (CO2)- for airing up tires and running impact wrench.
Oasis Off-Road quick deflators.
GPS, trail guides, and maps.
First aid kit and rags in passenger side rear storage compartment.
Jumper cables, fuses, and small umbrella in driver side rear storage compartment.
Rain poncho.
5 gallon water container (full).
Comfy collapsable chair and roll-up table.
Down sleeping bag during winter trips.
Rubber catch all front floor mats (factory floor mats otherwise).

I have a high lift jack but no roof rack yet to carry it on. I will carry spare belts/hoses/u-joints as soon as I can shell out the cash for them.
Just thought I could get some ideas on other things to carry from others out there.

Thanks! it gives me ideas on what to bring next time I'm out in the dirt. I guess a CB isn't a bad idea either. At least a cell phone would be wise, especially if you wheel alone. A chain saw might prove useful if you wheel in forest trails like me.
