Joel,
Is changing the trans filter and fluid in a 00' MS as involved as just remove pan, replace filter and put on a new gasket, then torque the bolts back up.
If so, can you give me the torque setting.

Yep! That's basically it...you can get away with a couple of "drain and fills" if you maintain your transmission faily often. If you'd prefer to change the filter, you'll need some liquid form-in-place gasket for the pan. Oh and...the torque spec for the new oil filter hold down bolt is 52 in/lbs and the torque for the pan bolts is 97 in/lbs. Please.....use only Mitsu SPIII fluid for your transmission. Your lockup torque converter will thank you for it...I posted somewhere else recently how to properly check you fluid level after a service..
For those of you reading this...only the 99 to current Montero Sports have an actual replaceable filter element. This INVECSII transmission is actually made by Mitsubishi whereas the 97-98 models have a transmission made by Asian Warner.

I change my trans oil to Amsoil when I first go it new, then basically changed right back to Mitsu oil ofter reading on the old forum that it might not be good for it.
I have 75,000 miles now and have not change the trans oil since, do you think just a oil change at this time is nessary or should the filter be changed?
Not much towing, just city/hwy driving.

That's a pretty long way to go without servicing your trans. I'd go ahead and change the filter as well on this one... the job is not too hard and not that messy if you have the right tools! If your pockets are deep enough, I'd replace the filter and have a complete ATF flush/exchange (were a fluid exchanging machine is hooked up inline with the trans cooler, taking in old dirty fluid while pumping out brand new/clean fluid to the trans). A drain and fill only drains roughly a bit more than 1/2 of the transmissions fluid capacity. There is still lots of dirty fluid inside the torque converter, valve body and other nook and cranny's within the trans that will just mix with the new fluid during a drain and fill service. Joel, CA
